🍲 My go to dish Brinjal/Eggplant 🍲

This dish is a side dish, or it can be use as a vegetarian main dish

My go to dish I like to eat with lots of salad it is easy, delicious and a great way to introduce different veggies to your kids. You will need brinjal (eggplant/bangun), Yogurt (dairy free), Coconut oil and some dry spices.

Starting from left to right in the picture below:
1 tablespoon Red chilli powder
1 tablespoon Black pepper powder
1 tablespoon Dry Parsley
1 tablespoon Salt (add flavours to your own liking)
Cut the brinjals into round shape with the skin on.
Heat 2 to 3 tablespoons of coconut oil in a heavy pan. When hot, add dry parsley- it will start to smell nice in a few seconds.
When it begins to smell nice, add the eggplant pieces. Turn the heat to medium, and cook until pieces starting to absorb coconut oil.
Add all the dry spices. Cook spices for 1 minute.
Saute until all sides are brown and juicy (Stir very gently)
Reduce heat to low. Let the brinjal cook gently for three minutes.
Put some yogurt, garnish with fresh coriander and serve or in my case eat (:
There are many different ways I make eggplant but this one is my go to dish specially in Ramadaan for sehri and for Aftaari. Try it you will like it too x! A ♡ O
